Vegetable Pasta Salad Recipe Directions

  1. Heat a small saucepan to medium, and add the oils, garlic and red pepper flakes. Stir and don't let the oil get too hot. Once the garlic is cooked, stir in the vinegar, tamari, water and maple syrup. Turn the heat down to medium-low, and stir occasionally while you prepare the vegetables.
  2. The next part of this pasta salad is to sprinkle some sea salt on the broccoli and mushrooms in a bowl with a tight-fitting lid. Add some tamari if you like for flavor, put the lid on the bowl and shake for a few minutes, until the vegetables start to wilt. Let them marinate while you chop the tomato, green onion and optional cashews.
  3. Cook the noodles, drain, and set aside to dry. Place the vegetables in a large bowl and pour the sauce over them and toss. Add the noodles and optional wakame and toss again. Garnish with roasted, chopped cashews.

Baked Spaghetti Family Dinner Recipe 

When it came to family dinners in our home, Spaghetti was at the top of the list with our children. Now that our children are all grown, my husband and I enjoy a more grown-up version of this favorite American dish.


I do not recommend freezing any left-overs, however, it will keep for up to 3 days in your refrigerator.

The following recipe will yield 6 servings.

Baked Spaghetti Dinner Recipe

1 cup onion, finely chopped
1 cup green pepper, chopped
1 tablespoon butter or margarine
1 (28 ounces) can tomatoes with liquid, chopped
1 can (4 ounces) mushroom stems and pieces, drained
2 teaspoons dried oregano
1 teaspoon dried basil
1 lb. lean ground beef, browned and drained
12 ounces spaghetti noodles, cooked and drained
2 cups Cheddar cheese, shredded
1 can (10 3/4 ounces) cream of mushroom soup, undiluted
1/4 cup tap water
1/4 cup Parmesan cheese, grated

In a large frying pan, saute the onion and green pepper in butter until fork tender. Stir in the chopped tomatoes, mushrooms, oregano and basil. Simmer for 2-3 minutes and then stir in the cooked ground beef. Continue to simmer over medium heat, uncovered for approximately 8-10 minutes.

Place half of the cooked spaghetti noodles in a lightly greased 9 x 13" baking dish. Pour half of the vegetable mixture on top of the pasta and then sprinkle with one cup of Cheddar cheese. Repeat the layers. Pour the soup into a small bowl and mix in 1/4 cup of warm tap water until they are combined. Pour the soup mixture over the casserole. Sprinkle the top with grated Parmesan cheese.

Bake in a preheated 350 degree oven for 30 minutes or until it's heated through.

Some carbonara facts


There are so many varieties of carbonara that it is hard to sort them out. Typically carbonara is made with pancetta or guanciale, egg yolk, and parmesan cheese mixed in spaghetti. Pancetta is a bacon that has been salt cured and spiced with nutmeg, pepper, fenel, dried ground hot peppers and garlic usually and dried for about three months. It is typically not smoked (I will show you how to make it in a later article). On the other hand, guanciale is a smoked bacon with pigs jowls mixed in. I lean toward pancetta and rarely use guanciale (can't get used to the taste). In the US, sometimes cream is used in the recipe, but this is not typical in Italy. I give some variations on carbonara, but the recipe below is my favorite. Oh, by the way, carbonara is Italian for charcoal and has led to the idea that it was a coal miners spaghetti (nonsense – no one probably knows the origins of carbonara).

A delicacy


I would like to think that my carbonara is more of a delicacy than a staple. It is a less traditional recipe than one would find in homes in Italy. But it is so creamy and delicious that my mouth waters just thinking about it. Try my recipe below and then move on to some of the variations I suggest to see what you prefer. It is a great dish for social gatherings.

Ingredients (4 to 5 servings):


  • 8 slices pancetta (you can substitute applewood smoked bacon if you want a more typical American dish)
  • 1 large onion chopped (you can use leeks but make sure you only use the white tender parts)
  • 2 large eggs at room temperature
  • ½ cup parmesan cheese
  • 1 tablespoon chopped fresh Italian parsley
  • salt and pepper to taste
  • 1 pound linguine (you can use spaghetti but I don't like it because it is hard to mix with the other ingredients) - see my homemade pasta

Cook the pancetta in a large skillet over medium high heat until done – about 8 minutes (I don't like it crisp but you may wish to reduce the fat by cooking until crisp). Remove the pancetta with a slotted spoon to a plate covered with a paper towel to drain (dice or chop into fine pieces). Add the onions and sauté over medium high heat until tender (about 6 minutes).

Pasta


At the same time, cook the pasta in salted water al dente style (it means cook the pasta enough to still have a slight resistance to the pasta when chewed – but this is a matter of taste and I recommend what you are comfortable with). Drain the pasta but reserve at least ½ cup of the liquid that you cooked the pasta in.

Mixing


Whisk the eggs and parmesan cheese in a bowl and then whisk in ¼ cup of the reserved pasta liquid. Meanwhile, add the pasta to the onions and stir while heating. Remove the pasta and onions and then pour the egg mixture over the pasta. Stir until the sauce is a wonderful creamy consistency and the eggs are no longer raw (less than 2 minutes). Return the mixture to a very low heat (do not overcook because the eggs will curdle). Add some of the pasta liquid if the pasta seems dry. Stir in the pancetta and parsley and serve adding salt, pepper, and parmesan cheese to taste.

I love the opportunities for variation with this dish. The most common carbonara calls for egg yolks instead of eggs. So you can substitute 4 egg yolks for the 2 eggs in the above recipe (I hate to waste the whites). If you have a trim waste line you can add ½ cup heavy cream to the egg mixture and 2 garlic cloves (diced).

Springtime in Italy is a real feel and smell season, as we begin to go out often and when the weather allows, we eat outside very often.
All these circumstances led us to recognize the season's aromas and uses. One of these main aromas it the basil one.

 400gr of pasta

Put the water to boil and begin to put into your mixer, the garlic, the pine nuts, the grated parmesan. As it mixes, add extra virgin olive oil until it becomes a cream to make Italian Pasta Recipe.
When the water boils, add salt and the pasta and set your timer for the time needed for the kind of pasta you are cooking (usually it is written on the package). About 2 or 3 minutes before your pasta is done take 2 or 3 spoons of the boiling water and add to your pesto. It helps it to become more creamer and easier to mix.
When the pasta is done, you just have to pour it through a strainer and mix your pesto with pasta. It is done! Its healthy (you have only raw and unsaturated fat), easy and tasty! Buon appetito!

Ingredients:
1 1/2 lbs medium shrimp, peeled and deveined
1 package spaghetti noodles
1 tbsp minced garlic
1/4 cup olive oil
3 tbsp chopped fresh parsley
1/4 cup lemon juice
ground black pepper to taste
Directions:
In a large bowl, mix together the lemon juice, olive oil, black pepper, garlic, and parsley. Add the shrimp to the mixture and toss it around until the shrimp is well coated. Marinate in the refrigerator for half an hour. Bring a large pot of water to a boil and cook the spaghetti noodles for about 10 minutes, or until al dente. Preheat the grill at a high heat setting. Add the shrimp to skewers and grill for about 3 minutes on each side, or until thoroughly cooked. You might want to oil the grate slightly to prevent the shrimp from sticking. Serve the shrimp on top of the noodles and drizzle just a bit of the remaining marinade on top.

Ingredients:
1 package spaghetti noodles
3 cans of tuna in brine, drained
1/4 cup flour
2 cups milk
1/4 cup sherry
1/4 cup mayonnaise
1/4 cup grated Parmesan cheese
2 tbsp butter
1 onion, chopped
8 oz fresh mushrooms, sliced
1 tsp salt
Directions:
Bring a large pot of water to boil and add the spaghetti noodles. Cook for about 10 minutes, or until al dente. Drain the noodles. Melt the butter in a sauce pan over medium-low heat, then add the onion and sauté until the onion turns soft, then add the tuna and mushrooms. Cook for about 3 or 4 minutes. Remove the tuna mixture from the heat and set aside in a large bowl. In a separate sauce pan, combie the flour, milk, mayonnaise, sherry, and salt. Mix well and heat until the sauce thickens. Pour the sauce into the bowl with the tuna. Mix well, then add the noodles. When the noodles are fully coated with sauce, transfer the mixture to a casserole dish. Sprinkle parmesan cheese on top and bake at 350 degrees F for half an hour.

How to cook Angel Hair Pasta?
Ingredients:
1 pound angel hair pasta
6 chicken breast halves
1 package dry Italian salad dressing mix
1 can condensed golden mushroom soup
4 oz cream cheese with chives
1/2 cup white wine
1/4 cup butter
Directions:
In a sauce pan, melt the butter over a low heat, then stir in the dressing mix. Add the wine and golden mushroom soup, then stir well. Mix in the cream cheese. Let this mixture heat thoroughly, but be careful not to let it boil. Arrange the chicken breasts in a baking dish and pour the sauce over them. Bake at 325 degrees F for about an hour. About half an hour before the chicken is done, bring a large pot of water to a boil and cook the pasta noodles for about 10 minutes. Drain the noodles and cube the chicken. Serve the chicken on top of the noodles and top with the excess sauce.

Ingredients:
6 chicken breast halves cut into cubes
1 lb fettuccine pasta
3/4 cup grated Parmesan cheese
8 ounces shredded Colby-Monterey Jack cheese
1/2 cup sour cream
1 cup half-and-half
3 cups milk
4 cloves garlic, divided and minced
6 tbsp butter, divided
1 tbsp Italian seasoning
1/3 cup flour
1 tbsp salt
3/4 tsp ground white pepper
Directions:
Throw 2 tablespoons of butter in a skillet over a medium heat. Add the chicken, Italian seasoning, and garlic. Cook until the chicken is white all the way through. Remove from the skillet and set aside for later. Bring a large pot of water to a boil and add the fettuccine pasta. Cook for about 10 minutes, then drain. Melt 4 tablespoons of butter in the skillet and sauté 2 tablespoons of garlic. Stir in the flour, pepper, and salt and cook for about 2 minutes. Slowly add in the milk and half and half, but be sure to stir constantly. When the sauce turns smooth, add the Parmesan and Colby-Monterey Jack cheeses. Stir until all cheese is melted, then add the chicken mixture and sour cream. Stir well and serve over the fettuccine noodles
